Caven Cellars
About the Winery
Caven Cellars Fraser Valley Pinot Noir comes from two plots of Dijon clone pinot noir vines, both planted in the early 2000’s. The Yard G plot is a gentle south facing slope on clay subsoil, but with a surface soil composed of small and medium stones and gravel. Yard D, 2 km to the west, is also south facing, and on clay soil, but with wild grasses between rows. Both are a mix of single and double cordon training, and spur pruning. The clay-rich soil common to both plots provides protection against water stress in dry vintages, but the little stones in Yard G provide some additional radiant heat to the maturing fruit, and so provide a more fruit-forward harvest, while the more moderated temperatures in Yard D result in a gradual fruit maturation and therefore enhanced complexity.
